Located in Manhattan’s West Village, Jeju Noodle Bar offers a refined take on Korean comfort food, particularly focusing on ramyun—Korea’s version of ramen. Since its opening in 2017, the restaurant has garnered acclaim for its innovative dishes and has maintained a Michelin star for six consecutive years.

Cuisine

Chef Douglas Kim, with a background at esteemed establishments like Per Se and Bouley, brings a meticulous approach to Korean flavors. The menu features a variety of ramyun options, including: Wagyu Ramyun: A rich veal bone broth complemented by raw Miyazaki wagyu brisket, enoki mushrooms, and white kimchi. Family Ramyun: Pork bone broth with porchetta, shrimp, wood ear mushrooms, and Calabrian chili. Gochu Ramyun: Spicy pork bone broth with pork belly, white kimchi, and charred scallion oil. Appetizers such as the Jeju Fried Chicken—served with onion powder, yogurt dip, and caviar—and the Toro Ssam Bap—featuring fatty tuna, scrambled egg, tobiko rice, and golden osetra caviar—showcase the restaurant’s commitment to bold, layered flavors.
